There are two main reasons why you might want to use collections in Blender. First, they can make it easier to work with complex scenes. Imagine you're working on a model of a house. You might have one collection for the walls, another for the windows, and another for the furniture. This can make it much easier to select the objects you need and avoid accidentally moving or deleting something you don't want to.
Second, collections can be used to create different versions of a scene.
